It’s creamy, cheesy, packed with smoky flavor, and always the first thing to disappear at cookouts, pool parties, tailgates, and backyard gatherings. Grab your favorite crackers, chips, or toasted bread because once this dip hits the smoker, it’s impossible to resist.
Here’s what you’ll need:
Ingredients:
- 1 block pepper jack cheese, diced
- 1 block cream cheese, diced
- 16 ounces Velveeta, diced (I used Blanco but you can use any)
- 1 Swaggerty’s sausage or your favorite sausage
- 1 onion, diced
- Jalapenos (I used two)
- 2 cans of Rotel
- Dan-O’s Spicy Seasoning
- Kinder Garlic Salt and Pepper Seasoning


Instructions:
First, preheat your smoker to 225 degrees Fahrenheit.
Next, in a large bowl, combine the diced pepper jack cheese, cream cheese, and Velveeta. Mix well to ensure all the cheeses are evenly distributed.
In a skillet over medium-high heat, cook the sausage until it is browned and crumbled. Add in the diced onion and jalapenos and cook until they are softened and fragrant.
Once the sausage, onion, and jalapenos are cooked, add them to the cheese mixture. Mix well to ensure all ingredients are combined.
Add in the cans of Rotel, making sure to drain off any excess liquid. Mix well.
Season the dip liberally with Dan-O’s Spicy Seasoning and Kinder Garlic Salt and Pepper Seasoning. Mix well.
Transfer the dip mixture to a disposable aluminum pan and place on your smoker. Close the lid and let smoke for approximately 30-45 minutes, or until the cheese is melted and the dip is hot and bubbly.


Once the dip is done, remove it from the smoker and allow it to cool for a few minutes before serving. Serve with your favorite crackers, chips, or sliced vegetables.
